I&amp;#8217;ve been making this salmon recipe since 2004 as it&amp;#8217;s super easy, healthy and so good! The recipe also includes a couscous but I often make it without and simply pair the salmon with brown rice or veggies. Enjoy!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Honey-Orange Glazed Salmon with Toasted Couscous&lt;/strong&gt;&lt;br/&gt;&lt;br/&gt;Serves 4&lt;br/&gt;Prep time: 7 minutes&lt;br/&gt;Cook time: 12 minutes&lt;/p&gt;
&lt;p&gt;cooking spray&lt;br/&gt;4&amp;#160;5-ounce salmon fillets&lt;br/&gt;Salt and ground black pepper,to taste&lt;br/&gt;1 orange (Y4 cup juice, 1 teaspoon finely grated orange peel)&lt;br/&gt;1 tablespoon honey&lt;/p&gt;
&lt;p&gt;1/2 teaspoon ground cumin&lt;br/&gt;2 teaspoons peanut oil&lt;br/&gt;1 cup whole-wheat couscous (uncooked)&lt;br/&gt;1 teaspoon curry powder&lt;br/&gt;1/2 cups reduced-sodium chicken broth&lt;br/&gt;2 green onions, chopped&lt;br/&gt;1/2 cup shredded carrots&lt;/p&gt;
&lt;p&gt;Preheat oven to 400 [degrees] F. Coat a baking sheet with cooking spray.&lt;/p&gt;
&lt;p&gt;Season both sides of salmon with salt and black pepper. In a shallow dish, whisk together orange juice, orange peel, honey and cumin. Add salmon and turn to coat. Transfer salmon to prepared baking sheet and brush on any remaining marinade. Bake 10-12 minutes, until fork-tender.&lt;/p&gt;
&lt;p&gt;Meanwhile, heat peanut oil in a medium saucepan over medium-high heat. Add couscous and cook 1 minute, until golden. Add curry powder and stir to coat. Then add chicken broth, green onions and carrots; bring to a boil. Remove from heat, cover and let stand 5 minutes. Fluff with a fork and season with salt and black pepper. Serve salmon with couscous on the side.&lt;/p&gt;
&lt;p&gt;Nutrition Score per serving (1 salmon fillet, 1/2 cup couscous mixture): 431 calories, 20% fat (10&amp;#160;g; 2&amp;#160;g saturated), 50% carbs (54&amp;#160;g), 30% protein (32&amp;#160;g), 9&amp;#160;g fiber, 83&amp;#160;mg calcium, 3&amp;#160;mg iron, 219&amp;#160;mg sodium.&lt;/p&gt;

As many of you know, Rick and I packed up our life and fur babies in Columbus and moved to Chicago, IL where I’ve taken a new position and Rick is pursing a freelance web development career. We arrived in October, sold our house in Columbus a few weeks later, moved again and then the holidays hit. Somehow we’ve managed to get organized but our relatively new leather sectional would not fit through the hall of our Lincoln Park townhouse so we’ve been without a sofa for several months. After looking for quite awhile, I finally settled on the first one (pictured, from West Elm) I found (doesn’t that always happen) and I waited so long that it was on sale!! Better yet, West Elm was kind enough to send me a “Welcome to the neighborhood” 10% off coupon which knocked a nice chuck off the discounted price. Needless to say, I was thrilled and the sofa should be arriving in the next few weeks. Looking forward to more updates as I make my way through our new city! &lt;/p&gt;

&lt;p&gt;I had a great visit with my Grandma Glo last week and as usual, she sent me home with a bag of goodies! As I’ve mentioned before (I think), I have a huge crush on vintage milk glass and my collection continues to grow! I love love love the “toy top”/modern shape of this candy dish, especially next to the liquor decanters on our bar. The over sized brandy/beaujolais glass filled with wicker accent balls was also a perfect fit next to the chrome candle sticks.&lt;/p&gt;
&lt;p&gt;Tip: It’s aways great when you can find a new use for an older or unwanted item. Mixing old and new items in your home is not only green but a great way to add character and warmth to your space. If you’re not lucky enough to have a fab Grandma Glo in your life, here are a few of my favorite spots….&lt;/p&gt;

&lt;p&gt;I had the honor of helping our good friends with their wedding flowers and decor over the weekend! Crystal was a well organized bride who knew exactly what she wanted which made my job VERY easy. I had a lot of fun assembling and setting up the arrangements and actually made my very first bridal bouquet (pictured)- which I’ll be adding to the resume for my future career change! (A girl can dream, right?!)&lt;/p&gt;
&lt;p&gt;Most of all, I really enjoyed my time with Crystal and getting to know her family and close friends. They are truly wonderful people, thanks so much for making me feel so comfortable!!&lt;/p&gt;

&lt;p&gt;With the Easter weekend fast approaching I wanted to share a few quick and easy decoration ideas. I love holiday decorations but hate spending a lot on something I’ll only use a few weeks out of the year. The base of the “Easter Egg Tree” pictured is actually a decoration I keep on my bar year round which I created using a large hurricane, sand from my favorite beach (Clearwater, FL), and a little leftover curly willow and moss from our wedding flower arrangements! (I actually hang Christmas bulbs on this thing during the holiday season so it looks great and really comes in handy!) I  found these metallic light weight Easter eggs at a Tuesday Morning end of season sale a few years back but you could even poke holes in the traditional plastic ones using a heated needle and create hangers using some fishing line or ribbon. The ceramic bunny was actually found at a thrift store but had a gaudy lace ribbon which I detached and replaced with this lovely satin ribbon. It’s a nice simple look and cost less than $10.00 to create!&lt;/p&gt;
