I’ve been meaning to post for months now and with NY diets in full swing, the timing seems just perfect. I’ve been making this salmon recipe since 2004 as it’s super easy, healthy and so good! The recipe also includes a couscous but I often make it without and simply pair the salmon with brown rice or veggies. Enjoy!
Honey-Orange Glazed Salmon with Toasted Couscous
Serves 4
Prep time: 7 minutes
Cook time: 12 minutes
cooking spray
4 5-ounce salmon fillets
Salt and ground black pepper,to taste
1 orange (Y4 cup juice, 1 teaspoon finely grated orange peel)
1 tablespoon honey
1/2 teaspoon ground cumin
2 teaspoons peanut oil
1 cup whole-wheat couscous (uncooked)
1 teaspoon curry powder
1/2 cups reduced-sodium chicken broth
2 green onions, chopped
1/2 cup shredded carrots
Preheat oven to 400 [degrees] F. Coat a baking sheet with cooking spray.
Season both sides of salmon with salt and black pepper. In a shallow dish, whisk together orange juice, orange peel, honey and cumin. Add salmon and turn to coat. Transfer salmon to prepared baking sheet and brush on any remaining marinade. Bake 10-12 minutes, until fork-tender.
Meanwhile, heat peanut oil in a medium saucepan over medium-high heat. Add couscous and cook 1 minute, until golden. Add curry powder and stir to coat. Then add chicken broth, green onions and carrots; bring to a boil. Remove from heat, cover and let stand 5 minutes. Fluff with a fork and season with salt and black pepper. Serve salmon with couscous on the side.

I apologize (to anyone who actually reads this) for the VERY long absence. As many of you know, Rick and I packed up our life and fur babies in Columbus and moved to Chicago, IL where I’ve taken a new position and Rick is pursing a freelance web development career. We arrived in October, sold our house in Columbus a few weeks later, moved again and then the holidays hit. Somehow we’ve managed to get organized but our relatively new leather sectional would not fit through the hall of our Lincoln Park townhouse so we’ve been without a sofa for several months. After looking for quite awhile, I finally settled on the first one (pictured, from West Elm) I found (doesn’t that always happen) and I waited so long that it was on sale!! Better yet, West Elm was kind enough to send me a “Welcome to the neighborhood” 10% off coupon which knocked a nice chuck off the discounted price. Needless to say, I was thrilled and the sofa should be arriving in the next few weeks. Looking forward to more updates as I make my way through our new city!
Cheers to a fab 2012!

That is the question… my personal fashion rule is October 1 but it’s freezing. Thoughts?
Love this… reminds me of growing up with my mom and brothers.
My brother in law and (future) sister in law announced their wedding date today and I’m already racking my brain for fall outdoor wedding ideas! Here’s a little of pic to stir up some creative juices… feel free to send some ideas my way. I’m sure the bride will appreciate it!
